How can you work your way up as a bartender when they match current position with new one???

If you tell them you are a barback, but ready to work as a bartender, and that you have even bartended at weddings, bartmitzvahs, of like 100 people etc..., they offer barback position. If you tell them you are an on call bartender they offer that to you. If you tell them you did cocktail serving they offer that? Why don't they ever let people work their way up by offering position as bartender?? Is it that hard for a manager to do this???? ???????How can you work your way up as a bartender when they match current position with new one???
Being in the position as a manager, I don't want anyone's hand in the till until I can get a better judgment of their character. Unfortunately in many cases an experienced bartender just has more experience at ripping off the bar. Barbacking is a perfect way to show you know what you are doing and can handle the volume, and gives you the opportunity to show your boss your integrity and work ethic. Running point behind a bar is just one of those things you have to work up to. Best of luck. How can you work your way up as a bartender when they match current position with new one???
Why don't you just tell them that you were a bartender? Most of the time a manager will hire you for the experience you have. If you are a barback they will hire you as a barback. Then see if you work out and will promote you at a later date.
